The following restaurant inspection results were provided by the Lenoir County Health Department:
Hibachi Express
2405 N. Herritage St., Kinston

Observations:
By Jan. 14, 2014, a certified food protection manager must be on site during all operating hours.
Employees shall clear their hands after handling soiled utensils.
Need to decide what food items are held in refrigerator more than 24hrs. These items may need to be date marked.
Bottles of cleaners, buckets of sanitizer need to be labeled with common name of chemical.
One small container of white dry good (flour?) needs to be labeled.
Utensils stored in water on hot line - water must maintain at least 135F.
If disposable towels are used for drying hands - need trash can at hand sink.
Chick-Fil-A
4499 U.S. 70 W., Kinston

Observations:
Employees must be trained on reporting symptoms and illness to manager/owner so if they are sick they can be properly excluded/restricted from working with food.
Observed one cashier biting fingernails and one cashier rubbing her face. Did not see them wash hands, but did not see them handle any food or utensil either. No one was in line at the time.
Grilled nuggets were below 135F. These were immediately moved to cooling process for chicken salad.
Could not find thermometer in prep cooler near pick up window. Temp was fine, but make sure you have an accurate thermometer in the warmest part of refrigerator to keep track of temperature maintenance.
Container of flour needs to be labelled with common name of food.
Observed one staff member entering kitchen wearing a ring (not a simple band). Did not see her prepare any food or drink. Just a reminder they should not wear rings if they are a food handler (including scooping ice).
Observed staff member enter kitchen with painted nails; remember to wear proper gloves.
One wet wiping cloth out on counter near grilled filet holding area. Any damp/wet cloth must be kept in bucket of sanitizer that is proper strength (and bucket must be properly labeled).
Need to clean - surface areas of equipment at chicken wash/breader station, hand wash sink area beside chicken prep area, bottom of freezer (fries).
Dumpster area - need to clean around grease container. Also need to remove extra pallets to make it easier to clean area.
Need a trash receptacle at any hand-wash sink were disposable towels are used.
Some trash cans in kitchen need to be cleaned thoroughly.
Bojangles
1028 New Bern Highway, Kinston
Score: 95
Inspection date: 1-14
Observations:
Hot foods shall be held at 135F or higher. Several items were not 135F and were discarded (chicken pieces on front line).
Cold foods shall be held at 45F (41F is better) or lower. Refrigerator drawers are not working properly. Items placed in there this morning were frozen and by 10:30 a.m. were up to 54-55F. These were placed back in walk-in cooler and you should not use this unit until repairs are made to maintain proper temperature.
At this time - no date marking anything other than raw chicken/marinade required by Bojangles.
Large white bin under drain board - needs to be labeled with common name of food.
Wiping cloths - once dampened - must be stored in bucket of proper strength, properly labeled sanitizer. Dry cloths are allowed on surfaces for wiping crumbs..damp or wet cloths are not.
Dish water temp was 101F. This was actually drained and new water made up. If water is clean, you can add hot water to bring temperature back up to 110F.
Cleaning needed - edges of drip pans under fountain drink dispensers, sink drain boards, prep refrigerator white board, top edges of ice bin at fountain drink dispensers, some dust on inside of ice scoop holder in back, refrigerator shelves, tea sink drain board, freezer bottom.
Need trash can with tight fitting lid in ladies room.
Some grouting eroded away between floor tiles...hard to clean.
Some floor, wall cleaning needed.
