Deli meats stacked higher than they should be in sandwich prep cooler; several portions of meat discarded; bottom layer of meat was 45F or a little below;
Person in charge was getting some water from hand-washing sink to put in double boiler - bottom part. Always use food prep sink faucets for culinary purposes;
Stem thermometers need to be calibrated or replaced. All of them were off...should read 32F when placed in ice water;
Boxes of single service items on floor in strock rooms; need to work on getting these properly stored;
Couple of mops outside that need to be hung up properly; one laying across air conditioning unit; one on back deck area;
Air conditioning vents need to be cleaned.

Open bag of seafood breader under prep table is torn badly; breader should be put in a container with lid or a reusable bag. Entire bag of breader can be stored to keep it in original packaging;
Effective hair restraint required for all employees;
Cleaning needed: White plastic drawers holding various single-service items, coffee filters, etc; hood surfaces; hand sinks; refrigerator doors/handles/shelves; outer surfaces of fryers and other grill equipment;
Need a trash can with a lid in ladies room;
Need a trash can at each hand-sink where disposable towels are used for hand drying;
Floor area is no longer cleanable;
Floors, walls - better cleaning needed;
Outside area needs to be cleaned;
Do not store brooms and dust pans at hand-wash sinks;
Lights in back not working properly. Need to repair to meet minimum requirements for food prep on surfaces in back.

Hot water for hand-wash sinks is borderline at 98-99F. Shall maintain 100F or more at all times;
One fried egg under heat lamp is not hot enough - discarded; All hot foods shall be kept at 135F or above;
Sliced tomatoes in top of prep refrigerator are not cold enough; spread in thin layer and moved to top shelf in bottom of refrigerator to chill back down quickly; all cold foods shall be kept at 45F or below.

New reach-in refrigerator has no thermometer inside; food employees may not wear jewelry on hands or arms other than flat, smooth rings such as a wedding band;
