The following inspections were conducted by the Lenoir County Health Department:

Hardee's

200 W. Vernon Ave., Kinston

Inspection date: 93

Score: 93

Observations:

Several pans, utensils and ice machine baffle have not been cleaned thoroughly

Large pieces of fried chicken are not cooked to 165F throughout

Weiners in steam table range from 122-149F - reheated, but some did not make it to 165F; chicken tenders in hot hold are 128F - discarded

Food employees wear rings and watches that are not approved

Clean as needed

Dumpster door is open

No drain plug provided for dumpster

Floors are very greasy

 


Murray's BBQ and Seafood

Observations:

Buckets of sanitzier need to be labelled

Walk-in cooler doesn't seem to be able to reach below 41F; barely holding 45-46F

Dumpster is not sitting on concrete or asphalt pad

Some floor, wall and ceiling cleaning needed

Several flies present

Louise's Diner

Observations:

Hand-sink up front has very little soap in bottle

Discussed date marking

Make sure all chemicals are labelled

Several chemicals mingled with food in storage

Label buckets holding sugar or other items not easily recognized

Wiping cloths cannot be left on any surface while they are dampened

Cannot re-use single use containers

All equipment/surfaces need better cleaning

Toilets, hand-wash sinks need better cleaning

Lots of repair issues

Lots of cleaning needed here...floors, walls, ceilings, mop water dump area, mops/buckets

Several lights not working above prep areas; need to repair

 

King's

Score: 91.5

Observations:

Had to remind staff (member) that he needs to wash his hands between handling dirty and clean utensils

Water was turned off to hand-sink in BBQ room

Paper towels not available at hand-sink in main kitchen or in dish machine room

Hand-washing sink in salad room is being blocked by box of collards

Make sure sanitizer is properly labelled

You will need to submit HACCP plan for vacuum packaging

Significant amount of splattered condensation from fan

Do not use garbage can liners for food storage

Collard prep staff - remind to take off jewelry unless it is a plain band

Need to air-dry all pans before stacking

Many items with rust, duct tape and signs of disrepair

Everything needs a good thorough cleaning; lots of grease build-up on large pieces of equipment, handles of large food cans, sinks, refrigerators, etc.

Need covered trash can in ladies room

Toilets, sinks in employee bathrooms need better cleaning

Need trash cans at all hand-washing sinks where paper towels are used

Floor, wall and ceiling cleaning needed throughout facility

 

Peach House

412 W. Vernon Ave., Kinston

Inspection date: Sept. 24

Score: 99

Observations:

Dish water was only 98F; must be 110F

Need to clean ice machine and air vent openings in top of prep coolers; quite a bit of buildup on those openings where cold air blows out across food product. Also need to clean fan sitting on top of equipment near hood

 

Smith's Cafe

2424 U.S. 258 N., Kinston

Inspection date: Sept. 24

Score: 97.5

Observations:

A few shell eggs stored above chicken salad

A few hamburger steaks were holding on top of grill until they need to be placed in gravy; temp had dropped to 106F - need to keep above 135F

Salads on ice - one had boiled egg on it that had risen to 50F; more ice was placed to cool it

Few items need to be date marked

Several containers of dry goods have faded labels

Cloths must be stored in bucket of sanitizer

Need trash can at every hand sink

Some wear and tear issues - floors, walls and ceilings

In flour container - need scoop with handle, not just a bowl

 

Boiler Room

108-B North St., Kinston

Inspection date: Sept. 25

Score: 98.5

Observations:

Pimiento cheese - small amount will be held off temperature for use on burgers. You must mark the pan with the time that is four hours past the time you remove it from the refrigerator. From now on, we will consider pimiento cheese to be held using time instead of temperature

Several pans holding dry goods need to be labeled/re-labeled

Effective hair restraint required for food employees

Need to keep "clean" drain board on dish machine actually clean

 

 

Hardee's

4171 W. Vernon Ave., Kinston

Score: 98

Observations:

Effective hair restraint required

Wiping cloths are stored in weak sanitizer

Sanitizer containers shall not be stored on the floor

Temperature for wash solution is 92F; sink emptied and re-run with water above 110F

Can wash needs grout and has damaged tile

 

King's

Observations:

Proper cooling methods not used

Unapproved equipment and/or not easily cleanable

Non-food contact surfaces need cleaning

 

 

El Azteca

Score: 98

Observations:

 

Beans on hot line are over 135F on edges but 117F in center

Label sugar container

Cutting board on prep cooler needs to be resurfaced or replaced

Dish machine has been worked on today; sanitizer bucket needs to be replaced

Keep a trash can at all sinks

Some floor, wall, ceiling wear and tear....no longer easily cleanable

Items in top of prep cooler were slightly above 45F; couple of items were cooling but seems to be heating up from grill and top staying open; will check back in the morning to make sure top of cooler is recovering

 

Chen's Chinese

211 W. Vernon Ave., Kinston

Inspection date: Sept. 26

Score: 87.5

Observations:

Employee drinks beverage from cup requiring removal of lid prior to drinking

Water at hand-wash sink is 82F at beginning of inspection

Few foods are not covered

Two pans have not been cleaned thoroughly

Fried rice is only reheated to 138F; needs to be 165F

Few containers of chemicals are not labeled

Several foods such as flour and sugar are not labelled

Garlic stored on empty egg crates; empty colanders stored on empty egg crates (these were obviously used to drain meat); flay swatter hanging on wall near prep sink

Food employees shall wear no jewelry other than smooth ring

Food employees are not wearing hair restraints

Few wet wiping cloths not kept in sanitizer

Store new utensils in clean location

Pepsi refrigerators no approved; contains uncovered/potentially hazardous food

Cover for trash can in ladies restroom is on the floor

Dumpster is open

No trash can for hand-wash sink in kitchen

Repair floors, walls and ceilings as needed; repeat
